Although Easter has come and gone, this yummy family recipe would still tempt all of the sweet toothed people among us. Plus its quick and easy which is my kind of recipe!
Serves 6
4 eggwhites beaten until stiff
Lightly fold in 1 cup of sugar with a knife
Fold in 3 dessert spoons of cocoa (Bournvilles is the best as it is richer)
Fold in 1 cup coconut, 1 cup of crushed weeties or cornflakes or weetbix
Fold in half a cup of crushed mixed nuts (I prefer walnuts)
Grease 8 inch round tin and put gladbake or foil on the bottom
Put it in a 350 - 375 degree oven and cook for 20-30 minutes
Let cool a little before tipping it out
Fill with whipped cream to which a dash of vanilla or rum and a dessertspoon sugar has been added.
Grate lots of chocolate over the top or top with drained Morello cherries (I like the cherries)
Serve with icecream but great on its own.
