Ingredients:
3 Chicken breast fillets
Saffron a small pinch
Mushrooms x2
Onion x1
Carrots x2
Red Capsicum x1
Method:
Slice the onion and add saffron to it in a bowl.
Marinate the chicken in the onion and saffron ingredient over night.
Stirfry chicken, sliced mushrooms, carrots and red capsicum in a pan.
Put the lid on and make sure the vegetables remain nice and crunchy.
Serve with white rice....MMM....
This meal is high in protein and contains good amount of vitamins and minerals thanks to fresh vegetables.
The secret that makes this food different though is the "Saffron" used as the only spice.
I will keep you posted about the secret of "how to extract saffron odor"...
