Vanilla Slice
Ingredients
3 sheets puff pastry thawed (I just used the bought stuff, I'm clever, but not that good....yet)
(for the custard)
3 egg yolks
200g castor sugar
50g plain flour
25g cornflour
500ml milk
1/2 tsp vanilla extract
(for the icing)
1/4 tsp vanilla extract
225g icing sugar
boiled water
Method
Preheat oven to 225degC, line baking sheet with baking paper, put pastry sheets on (may have to do this one at a time) and prick with a fork. Place in oven for 10-15 mins or until golden brown. Set them aside to cool.
(I used my kenwood mixer for the next few steps) Beat the egg yolks and sugar till pale, add the flour and cornflour and mix well. Add 1/4 of the milk to loosen the mixture and mix well. Put the rest of the milk and vanilla into a pan and bring to the boil. Pour the milk into the eggs (slowly and if using the mixer, beat it on low whilst doing this so not to 'scramble the eggs'). stir well and return the mixture to the heat and cook until it thickens. You want it quite thick as it doesn't really thicken much whilst cooling and you don't want runny custard in your vanilla slice, be patient it can take a while! Set it aside covered with clingwrap and cool.
Add vanilla extract to the icing sugar and whisk in the boiling water spoon by spoon until you get a good spreading consistancy. (I kept a little back for the pink stripes)
Lay one sheet of the cooked pastry onto a board, and spread it with haf of the custard, lay a second sheet on top and spread on the rest of the custard. Lay the third sheet on top and spread the icing mixture on top. To decorate use some of the icing mixture with food colouring and make a pattern on top, or melt some dark chocolate and draw a pretty patter on top.
Put into the fridge to set. Then carefully cut into slices and Enjoy!
