Ingredients
1 cup custard Powder (I use white wings gluten free vanilla)
1 cup castor sugar
5 eggs
1/2 tsp bicarb soda
1 tsp cream tartar
Method
Beat eggs and sugar for 10 minutes. It will be pale and thick. Sift custard powder, bicarb and tartar 3 times. Fold the dry mix through the egg mix lightly until thoroughly mixed being careful not to knock the air out of the eggs. Bake for 20 mins at 190 degrees.
Best served with lots of jam and cream and I dust the top with icing sugar. This sponge freezes well. It will make 2 sponge cakes and I usually cut one in half and freeze the other.

I made this the other day, and so I thought I'd post it, its a little too easy to make and it cools quickly so I'd say you're only about an hour away from sponge cake at any time of day or night... VERY dangerous! :D
