CHOCOLATE CHIP COOKIES
Ingredients:
125g butter or margarine
1/2 cup castor sugar
1/2 cup brown sugar
1 eg lightly beaten
1 tsp vanilla essence (tho i ALWAYS add more, I LOVE vanilla!)
1 3/4 c self raising flour
155g chocolate chips (tho I allways find myself using more hehe!)
Step1:
set oven temp to moderate (180deg). Lightly grease baking trays with extra melted butter or margarine (or just use baking paper). Beat butter or margarine until soft, add the castor sugar and brown sugar and continue beating the mix till it is light and fluffy.
Step2:
Gradually add the egg and vanilla essence beating till well combined.
Step3:
Sift the flour and fold into the mix. Add the choc chips and stir till well combined.
Step4:
Pinch off teaspoonfulls of the mixture and roll into small balls. Place on prepared baking trays leaving room between each one for spreading. Bake in the preheated oven for 15mins or until firm and light golden in colour. Remove from oven and place on a wire rack to cool. Store in airtight container.
