Beef and Tomato Curry
Ingredients
3 tablespoons oil
750g chuck steak
3 onions (i just use one or two smal ones)
3 cloves of garlic (up to you how garlicky you like it)
1 tablespoon curry powder
2 teaspoons ground cumin
2 teaspoons ground coriander
2 tablespoons of tomato paste (I find it a bit overpowering so I use tomato sauce)
1 tablespoon sweet fruit chutney
440g tin tomatoes crushed or diced
1 cup beef stock (i use low salt variety)
Method
Heat oil in large frying pan, add meat and saute for 4 to 5 mins until browned. Remove meat from pan and set aside. Reduce heat to medium and add onions and garlic. Add curry powder and fry for 1 minute. Return beef to the pan, then add cumin, coriander tomato paste, chutney, tomatoes and stock and bring to the boil. Reduce heat and simmer for 1 hour stirring occasionally until meat is tender.
Another way of doing this is to add all of the above into a slow cooker, and leave to cook till meat is tender (depends what cut of beef and how big u cut the chunks - betw 6 and 8 hrs on low) You can make it super healthy by adding mushrooms, carrots, potato etc :)
